Ingredients

  • 1.1 lb Chicken Liver
  • 2 tablespoons Cooking Oil
  • 1 medium sliced Red Onion
  • 6 cloves chopped Garlic
  • 2 Bay leaves
  • 1 teaspoon whole Peppercorn
  • 1 tablespoon Sugar
  • 2 tablespoon dark soy sauce
  • 3 tablespoons White Vinegar
  • Salt and pepper (optional)

Instructions

  1. Clean 500 grams of chicken liver. Set aside in a strainer. Step 1 Chicken Livers In Strainer
  2. In a pan, heat 2 tablespoons of cooking oil and sauté 1 medium sliced red onion.  Cook until the onion turns translucent. Step 2 Sliced Sauteed Red Onion

  5. Place 2 bay leaves, 1-teaspoon whole peppercorn, 1-tablespoon sugar and 2 tablespoons dark soy sauce. Mix well and change the temperature to low heat. Let it simmer for at least 3 to 5 minutes to help blend the flavor of the spices together. Step 5 Add Bay Leaves To Pan
  6. Add 3 tablespoons white vinegar and refrain from mixing further. Cover and cook for another 3 to 5 minutes or till the acidic smell of the vinegar has evaporated. Step 6 Cover And Cook Chicken Adobo

Notes

  • Using dark soy sauce helps with the flavor and color of the dish. 
  • Taste the dish first before adding more salt and pepper.
  • If the sauce has evaporated or is too thick, add 1/8 to 1/4 cup water and let it simmer for 5 minutes.
